In the same way that chef’s forage for seasonal products, dating back to the early 1900s before during & after prohibition, bartenders were forced to design cocktails around limited supplies of underground liquor (Bathtub Gin) to make alcohol taste good.

Bootlegging

‘Rum running’ - The illegal transporting of alcohol beverages during prohibition.

Al Capone is the most famous example of a multimillion dollar crime figure who ran a bootlegging organisation in the 1920s.


Sky High
